| Sursild
Sursild [sour herrings] is a typical Norwegian recipe and is eaten on
bread. Ingredients: salted herrings, onions, vinegar, water, sugar, whole
peppers, cloves, and laurel leaves. The herrings can be whole or filleted salted
herrings as well as matjes etc. Let 6 filleted herrings lie over night in
water and a little milk in order to extract some of the salt out of the
herrings. This may be omitted if the herrings are already sold ready to
eat. Cut the filets diagonally in 1.5 to 2 cm wide stripes. Cut two onions
in rings. Put the herrings and onions layers in a large glass. Mix 1dl 7%
vinegar, 2 dl water and 3/4 dl Sugar, 2 laurel leaves, 10 or more whole
peppers and five cloves. (Alternatively: 1 part vinegar + 1 part water + 1 part sugar
etc.) Pour this into the glass over the herrings and onions and store in a
cool place for 24 hours. That's it.
